The other night I was feeling pretty inspired. I LOVE to cook, but it's hard to find the time to experiment when you have a toddler running around the house. lol But I am tired of making the quick meals, it always ends up being the same things. So I made a new dish, from the top of my head. :)
I cooked penne pasta, set that aside.
I took 2 chicken breasts, dipped in butter, breaded it w/ breadcrumbs and seasonings. I fried the 2 chicken breasts in the skillet, just for color. I then put them in a dish, covered in foil and baked at 350 degrees for 20 minutes. Meanwhile, I mixed a can of cream of mushroom soup and sour cream. Once the 20 minutes were up, I took the dish out of oven, put the cream of mush/ sour cream mix in the dish w/ the chicken. Covered it once again and baked for 15 minutes. Once the 15 minutes were up I put some toppings on my dish: tomatoes, chives, shredded mozzarella cheese and Italian seasoning. I baked uncovered for 5 minutes or until the cheese melted. I served that over the pasta and it was SO good. :) The mixture made an incredible sauce. The only thing missing was garlic bread, but I had none at home.
The more I thought about it, instead of cream of mushroom you can use cream of celery, cream of chicken, or even that thick cheddar soup. I think they all would make incredible sauces. :)

ReplyDeleteThat sounds and looks really good and as my kids don't like mushrooms, substituting the cream of chicken would probably work well.
